Travel: Edinburgh Day Out

I love a good staycation and we have stayed in some lovely Edinburgh hotels before, but last Saturday we headed to the capital for a day trip, with our fingers crossed for good weather. We were really lucky, as the whole car journey and the time we spent in Edinburgh were filled with sunshine and we had a fab day taking in the architecture and views. We also indulged in some yummy vegan food and delicious mocktails and checked out some shops we don't have in Glasgow (Anthropologie, Harvey Nichols etc). Perfect!

Glasgow Loves Christmas Day Out 2018.

Last Thursday I attended a festive day out with Glasgow Loves Christmas and we visited some fabulous places, including restaurants, shops and the Christmas market. I adore Glasgow in December, even when it's busy with people shopping for gifts. It always looks stunning and never fails to make me excited for Christmas.

Unity Diner - Non Profit Vegan Diner in London

When I was planning our trip to London, Unity Diner in Hoxton was on the top of my list of places to eat and we went right after arriving at Euston station. It's a non profit restaurant founded by the incredible Earthling Ed who inspires me daily to be a better human. All of the profits from Unity Diner go directly towards funding the animal rights organisation Surge as well as the development of a brand new rescue sanctuary for animals just outside of London. The cause itself is a reason to visit, but the food... Oh my god... It was absolutely incredible! 

Coffee time

I cannot live without my Nespresso coffee machine and I always look for new compatible pods to use with it. There's plenty to choose from on the market and my recent batch is from Real Coffee who offer a big variety of blends and flavours for Nespresso and Dolce Gusto machines.

Day out at Soar Intu Breahead and Vegan Pizza Express Lunch

We recently went out for a super fun day at the newly renovated Soar at Intu Breahead and I am so impressed with the new modern look! The ‘space trees’underneath a ceiling of stars and a ‘light box’ wall showing all the constellations in space look incredible! We went to a chocolate workshop with Zachary, bounced at the new Gravity Trampoline Park, had vegan lunch at Pizza Express and finished with some mini golf. 

Warm Autumnal Sweet Potato and Kale

I adore salads, but when it comes to  the cold Autumn/Winter months, I like to serve them warm for a more comforting feel. One of my favourites is this kale and sweet potato recipe with green beans, pomegranate, feta (vegan), rocket, caramelised shallots and the most simple dressing!

As a huge Vitamix fan, I never expected to find something equally good, or even better. Well... I was wrong! As soon as the Sage the Boss by Heston Blumenthal* (£499.95) landed on my doorstep, I fell in love with it. From the sleek design to all the amazing functions - it is simply incredible!

Chocolate chip cookies and cream no-bake cake recipe

Baking is not my forte, but I enjoy occasional sweet treats, especially if they don't require actual baking, haha. My recent creation is this dreamy chocolate chip cookies and cream fridge cake and it is the most simple cake I have ever made. Seriously, it takes about 15 minutes to make.

Plenish Juices

Since it's January and it's officially the 'detox season', I thought I will mention my experience with Plenish. I am a big fan of juicing and I often drink fresh veg/fruit juices to nourish my body, speed up my metabolism or even as a short cleanse. Some people do juice cleanses for a couple of days, some do it for weeks or even months. I personally wouldn't do it for longer than a week and my longest cleanse lasted for 3 days.
