Refreshing Cold Drinks For Summer (with Vitamix)


Since the weather improved slightly, I have been experimenting with non alcoholic cocktails and frozen coffees and I created some really lovely combinations. Most of them are completely clean and healthy, but I do use Monin Syrups sometimes to add more flavour. PS. If you have been waiting for my Frozen Coconut Latte recipe, you don't have to wait any longer :) 

Strawberry & Pomegranate Mojito 

For the first, not 100% clean version you will need: 15-20 mint leaves, 1 tbsp of Monin Lemon Syrup, 1tbsp of Monin Pomegranate Syrup, 2 fresh strawberries, 200ml of sparkling water, ice cubes or crushed ice.

For the completely clean version, you will need: 15-20 mint leaves, juice of 1 lemon or lime, 2 tbsp of fresh pomegranate seeds, 2 fresh strawberries, 1 tbsp of agave nectar (you can use more, if you like sweeter drinks), 200ml of sparkling water, ice cubes or crushed ice.

You simply throw all the ingredients into the Vitamix, blend on high speed for 30 seconds and serve with fresh mint, strawberries, slice of lemon and more ice. Absolutely delicious! You can add your choice of alcohol to it if you want, but I prefer non-alcoholic options :)

Watermelon Slushie 

Making this 'drink' couldn't be more simple. You simply throw 200g of fresh diced/sliced watermelon and 200g of ice into the Vitamix and blend on high speed. The outcome is a 100% clean slushie. It's incredibly tasty, but it gives you major brain freeze :) haha

Virgin Mojitos

Another personal favourite :) To make 2 servings, you will need: 30-40 mint leaves, 4 tbsp of agave syrup (or coconut nectar),  60ml of lime juice, 200g of ice, 400ml of sparkling water.

Again, you simply blend all the ingredients on high speed and serve with fresh mint, lemon and ice. You can make it sweeter if you like as well, or add alcohol if you don't like virgin cocktails.

Iced/Frozen Chai Latte with Almond Milk

To make this delicious iced drink, you will need: 2 chai tea tea bags, 150ml of almond milk, big handful of ice, 2 tbsp agave nectar, 1/2 teaspoon vanilla essence.

Firstly, brew your chai tea. I use 2 teabags (for extra strength) and 100ml of water. If you use ice in the recipe, you don't have to wait for the tea to cool down. Simply pour all the ingredients into the Vitamix and blend on high speed for 30 seconds. You can use cows milk if you want, or coconut cream if you want it extra creamy and thick.

Frozen/Iced Coconut Latte

Oh my, this combo is my favourite cold drink ever! To make one serving, you will need: 100ml of frozen coconut milk, 150ml of light coconut milk or almond milk, 2-3tbsp of coconut nectar or sweetener of your choice, 1 tbsp of instant coffee, 1 tsp of vanilla bean paste, 2 tbsp of toasted coconut flakes.

Ok, this recipe required some prep, but it is worth the hassle! Firstly you have to freeze your coconut milk in ice cube trays. I have some in the freezer at all times - I am addicted to coconut milk! You will also have to toast some coconut flakes in the oven (highest temperature for 5 minutes) or in a frying pan (until golden brown). Once you have done this, brew your coffee with 50ml of boiling water. Blend all the ingredients in the Vitamix on high speed until they turn into a smooth and creamy latte. You can serve it on ice, with some whipped coconut cream on top or add Monin Coconut Syrup to make it even more delicious! I am addicted!
