Quick Mexican and Brazilian lunch ideas (AD)

Before I had my second baby, I had plenty of time for everything. As soon as Mia arrived, it all changed and I often struggle to prepare every single one of my meals from scratch. If you read my blog regularly, you will know that I love cooking, but having a quick ready meal in the fridge or freezer is always a must for me, as I need the calories to breastfeed and I can't skip meals. The new limited edition Weight Watchers meals fit into my new life as a mum of 2 perfectly and they are pretty yummy too!

There are two new Summer options to choose from: Naked Enchilada and Brazilian Bahia Chicken and both will be available for the next 12 weeks, until the next limited edition meals are released. The two dishes are inspired by Brazil and Mexico, with the Brazilian Bahia Chicken being a perfect tribute to the Olympics in Rio. 

Eating healthy meals every single day can get pretty difficult when you struggle to find time for cooking, especially when you love trying new flavours and cuisines. With the new Weight Watchers ready meals, you can have a taste of Brasil and Mexico, knowing the exact amount of calories you're consuming and being able to control your portion as well. Both meals are under 400 calories, which is perfect for lunch in my opinion. Or with an added side, a great option for dinner.

The 'Naked Enchilada' (which is exclusive to Asda) consists of Mexican style rice with beans and a tomato based sauce with chicken, juicy peppers and jalapenos. It's quite spicy, but I love this kind of heat in my food. It's full of flavour and very filling as well and the chicken breast pieces have a nice texture and don't feel dry or 'fake', if you know what I mean. I added a bit of salt and pepper, a squeeze of lemon juice and extra chillies for a real kick and I absolutely loved it!

 The Naked Enchilada meal comes to a total of 304 calories, has 5.7g of fat and counts as 1 of your 5 a day, which is fab! If you're a WW member, the points value of this meal is 8. I personally don't follow any specific diet plan, I just focus on getting plenty of fruit, veggies and good carbs.

 Next, we have the Brazilian Bahia Chicken & Rice, which  is also scrumptious! Full of tangy tomatoes, beans, rice, chicken breast pieces and chilli, this option will definitely tickle your taste buds. I added a sprinkle of parsley, salt & pepper and a lemon wedge to mine and I enjoyed every single bit of it. I tried both of the meals from the fridge and from frozen and the texture of the chicken and the overall flavour were lovely each time. Just follow the instructions on the packaging and your meal will be ready in a couple of minutes.

 This meal comes to a total of exactly 300 calories, has 3.1g of fat and is also 1 of your 5 a day. The information on the packaging tells you everything you need to know, just in case you're allergic to anything etc.

Again - it looks pretty good! I personally love putting some effort into the presentation of my meals, even if they are cooked in the microwave. It just makes the full experience so much nicer and you enjoy the food more. Sprinkle your favourite herbs, add a lemon wedge and it will look and taste even better!

I really enjoyed both of the meals and I would definitely buy them again. You can find the Naked Enchilada in Asda and the Brazilian Bahia Chicken in Asda, Morrisons and Ocado, retailing at £2.59.
