Whole Food Juicing (without wasting precious fibre)

I own a decent juicer and I am a self confessed carrot juice addict but removing the fibre from fruit and vegetables breaks my heart and I see it as an absolute waste of something our body really needs, plus... juicing fruit means that you end up drinking a glass full of sugar! That's why I have been making more 'juices' in the Vitamix Pro 500 and I must admit - most of them are absolutely delicious.

I am not sure if other blenders make super smooth juice, without removing the fibre, but Vitamix has absolutely no problem with that, thanks to its powerful motor with a blade speed of 386 km/h! Beast! :) haha. I can basically make juice with any fruit or veg, water and ice, without losing any of the precious nutrients. You don't have to peel the fruit and veg either, unless the skin is super thick, like pineapple etc. For some reason, the juices can get a bit frothy on the top, but I don't mind that.

Pineapple 'juice'

You will need 400 g of fresh pineapple chunks and 1 cup (240 ml)  of ice cubes to make around 700ml of smooth and silky pineapple juice, but I tend to make it lighter, with less pineapple and more water. Both options are yummy! Any quantity will work, just make sure to throw in the pineapple cubes first, with ice on the top and blend on high speed for -2 minutes, using the tamper if needed. You can add a little bit of cold water if you don't have enough ice cubes. The reason why the recipe requires ice cubes is to keep the juice cold, as liquids tend to get warm at such a high speed.

Carrot juice

My only weakness when it comes to switching from old style juicing to whole food juicing... Unfortunately, the flavour isn't the same in this case, but... it is so much cheaper to make big quantities of carrot juice in a blender. All you need for 600ml of carrot goodness is: 1 cup (240 ml) of water, 1 1/2 cups (190 g) of diced carrots, 2 teaspoons of fresh lemon juice, 1 cup (240 ml) of ice cubes. That's basically one big carrot per 600ml of juice, which is fantastic. I normally need 3-4 big carrots to make one 300ml jar of carrot juice. It's a big difference and I can get used to the more subtle flavour. It is still lovely. Just throw all the ingredients into the Vitamix and blend on high speed for 1-2 minutes. It also tastes amazing mixed with pineapple or apple.

Green juice

I love green juices and I usually make them with whatever I find in my fridge/freezer :) They are very refreshing and...amazing for your body! My favourite combination is a handful of kale, a couple of chunks of frozen spinach (or 2-3 handfuls of fresh leaves), one kiwi, 1 cucumber, 1 cup of ice cubes, 1 glass of water. You can add lemon juice as well. It's yummy!

I either drink the full amount (600-1000ml) right away, or separate it into two jars and keep one for later. I very rarely make small batches of juice in the Vitamix, because I always need extra hydration and I can drink a giant jar at one sitting or drink it through a straw slowly, while working on the laptop etc.

I am glad I switched to whole food juicing, because it is better for you. I still enjoy a traditional vegetable juice (never fruit based - too much sugar) a couple of times a week, but I make sure to use up the leftover pulp in homemade sauces or smoothies, because wasting it is just ridiculous! In my next Vitamix instalment I will tell you all about the amazing frozen desserts I made using this incredible appliance - ice creams, sorbets, smoothie bowls. YUM, YUM, YUM! :)
