Recipe: Warm couscous salad


I love couscous and I add it to many dishes, including salads. To keep the calories down, I usually mix it with vegetables and serve it with an egg, fish or chicken. Today's recipe is very simple and it only takes 15-20 minutes to make.


You will need:

100g of couscous
1 vegetable stock cube
1 lemon 
1 tsp of olive oil
1 broccoli head
a handful of green beans 
a handful of mixed peppers 
a handful of shredded carrot
1 onion
2 garlic cloves
fresh thyme
sea salt and pepper for seasoning

PS. You can substitute fresh veg, with frozen options and fresh thyme with dried herbs of your choice.

Pour couscous into a bowl, crumble your vegetable stock cube over it, add 150ml of boiling water and a squeeze of lemon juice. Cover the bowl with a lid and leave it, until you are done with the veg. Chop all your vegetables and stir-fry them in a wok, with a tsp of olive oil. If you prefer the veg softer, you can cook it in water and drain it, but it will lose a lot of the goodness. Mix the vegetables and couscous in a bowl, add another squeeze of lemon juice, fresh thyme, sea salt & pepper and the salad is ready!

You can serve it with a poached egg, fish, chicken, bacon or smoked sausage, Quorn fillets or Quorn sausages. Yum! I opted for a poached egg and my husband asked for smoked garlic sausage (fried in olive oil). 

It is a delicious salad, very easy to make and can be served hot or cold. If I have any leftovers, I eat it with other meals and mix it with spices, like Tandoori or Cajun, to change the flavour a bit.
