Recipe: Roasted Butternut Squash Salad


Salads are my favourite Spring/Summer dishes and I could eat them for every meal. I absolutely love them! That's why I always experiment with different ingredients and try to come up with new ideas. My new favourite is the Roasted Butternut Squash Salad. Oh my... It tastes amazing!

Butternut Squash is super cheap and usually costs £1.00! I love it in spicy butternut squash soup or eat it instead of potatoes with my dinner. It tastes amazing, it is low in calories and full of vitamins A and C, fiber, potassium and Omega 3 fatty acids. I am addicted to it! Today's recipe is a simple salad, I instagrammed a couple of days ago. You can make it with your choice of veg, but I used:

-1/4 cucumber
-1 tomato
-3 big mushrooms 
-a handful of lettuce
-a tablespoon of chia seeds
-1/3 butternut squash
-3 garlic cloves ( I used smoked garlic)
-chilli flakes or 1 fresh chilli
-sea salt and pepper for seasoning 
-100ml water 
-olive oil spray (optional)
-1 lemon


I started with peeling the butternut squash and cutting it into 1cm thick slices. I added 3 chopped smoked garlic cloves, chilli flakes and sea salt and placed it all on a baking tray. I also poured 100ml of water into the tray, to keep the squash moist. You can also spray it with olive oil, but I wanted to keep the calories down. Bake the squash for 20-30 minutes in a preheated oven - on full heat. In the meantime, cut all the veg into chunks or slices and arrange it on your plate. Once the squash is cooked, place it in the middle of the plate, squeeze a generous amount of lemon juice allover the salad and sprinkle with chia seeds. Season with sea salt and black pepper. It's delicious!
